Difficulty of rebuilding a Holly carburetor on a 1979 Jeep CJ7?

I haven't rebuilt that particular carburetor, but I rebuilt a rochester 2 barrel carb from a 1975 pontiac. it's not very difficult, I used a cheap foil roasting pan to hold parts and clean stuff in. make sure you have a good light source, as its not fun to work in the dark. Take your time, don't rush things. If your going to install a new float, make sure you adjust it properly, you may have to bend the piece of metal that hangs the float to get it to float at the right level (should have instructions to do it).
